Yellow Pulav, Chunky Masala Potatoes And Chicken Masala (Mangalorean Style) Recipes! Finger Smacking Good Stuff Here!

The other day we had a veritable feast at home since my husband was home for lunch and so I went on a cooking spree and turned out three super recipes for lunch. We had Yellow Pulav, Chunky Masala Potatoes and Chicken Masala (Mangalorean Style) and all of them came out very well. I am posting all three recipes in a single post here since their combination came out so well and was very well appreciated by my husband and my MIL (that’s Mother-In-Law). Try them out and do improvise if you feel the need to, but I can assure you they will come out very well and be great for lunch or dinner.

Yellow Pulav Recipe!

Ingredients:

  • Raw rice 1 cup
  • Cardamoms 2
  • Cloves 3
  • Cinnamon 1 inch
  • Ginger garlic paste 2 tsp
  • Turmeric a pinch
  • Oil 1 tbsp
  • Water 2 cups

Method:

Wash rice and soak for about half an hour. Heat oil in a vessel and add turmeric and stir. Add cardamoms, cloves, and cinnamon and fry for a while. Add ginger garlic paste and fry for a while. Add the rice and fry thoroughly. Now add water and stir. Cook till the rice is done.

Yellow Pulav, Chunky Masala Potatoes And Chicken Masala (Mangalorean Style)

Chunky Masala Potatoes Recipe!

Ingredients:

  • Potatoes, 3 large
  • Jeera/cumin, roasted and powdered 1 tsp
  • Black pepper, crushed 1-2 tsp
  • Dry red chilies, crushed 1 tsp
  • Salt to taste
  • Oil 1 to 2 tbsp

Method:

Wash potatoes thoroughly. Parboil along with cover. Don’t peel. Cut into long thick strips. Add powdered jeera/cumin, crushed black pepper and dry red chilies, and salt to the oil. Mix well, pour over the potato strips and toss. Heat a pan, preferably nonstick. Add the potato strips and fry for about 10 minutes on medium heat. Avoid using a spatula to stir. Keep tossing now and then. If desired this dish can be garnished with spring onions. Just add a handful of chopped spring onions a minute or two before turning off the stove and toss.

Chicken Masala (Mangalorean Style) Recipe!

Ingredients:

  • Chicken 250 gm
  • Curd 2 tbsp
  • Onion, chopped ¼ cup
  • Ginger garlic paste 1 tsp
  • Chili powder 1 tsp
  • Coriander powder 1 tsp
  • Oil 1 tbsp
  • Turmeric a pinch
  • Salt to taste

Method:
Cut and wash chicken. Marinate chicken with curd and salt for about one hour. Heat oil and fry turmeric. Add onion and fry till light brown. Then add ginger and garlic paste mixed in a tablespoon of water and stir well and then add chili and coriander powders mixed in two tablespoons water and stir well. Cook till the oil comes out. Add chicken and fry for a while. Add enough water to make gravy. Cover and cook on a slow flame till the chicken is done.

Note: This can be cooked in a pressure cooker too. After adding water close the lid and pressure cook for three whistles.
