This is my sister’s version of chicken curry which is quite simple and easy to prepare. This is something she has honed and developed to prepare in a jiffy being that she is in the United States and many a time needs to come up with something quick.

Method: Wash the chicken and drain it. Add the well beaten curd, ginger garlic paste, red chili powder, turmeric powder, and salt to taste to the chicken. Mix thoroughly and marinate for about one-half hour. Heat oil in a cooking vessel and add the bay leaf, cinnamon, cloves, and green cardamoms. Fry for a few seconds taking care not to burn the spices. Add the chopped onions and slit green chilies and fry till the onions turn golden brown. Next add the marinated chicken. Stir, cover, and cook on a high flame for about 7-10 minutes. Add water if necessary and cook on a low flame till the chicken is done. Serve hot garnished with coriander leaves.
