
The other day I was in no mood to cook so my dearest and loving husband ordered some lip smacking pizzas. At the end of it I was left with a good number of sachets of oregano. I was just wondering how best to use them and so I decided to try and replace some of the ingredients in the Chunky Masala Potato Recipe with oregano and it turned out to be simply delicious.
Ingredients:
- Potatoes, 3 large
- Black pepper, crushed 1-2 tsp
- Oregano ½-1 tsp
- Salt to taste
- Oil 1 to 2 tbsp
Method:
Wash potatoes thoroughly. Parboil along with cover. Don’t peel. Cut into long thick strips. Add crushed black pepper, oregano, salt to taste, and oil to potato strips and toss. Heat a pan, preferably nonstick. Add the potato strips and fry for about 10 minutes on medium heat. Avoid using a spatula to stir. Keep tossing now and then. Serve hot.
